Nanny's Chicken and Rice

 

Ingredients

  • A whole chicken
  • 1-2 lb of white rice depending on pot size
  • bundle of green onion
  • salt
  • pepper
  • water

Fill a large pot with water. LARGE - you are putting a WHOLE chicken in there. Now, get all the extras out of your chicken. It probably sporting a bag of goodies up its butt. Don't need those.

Now boil that sucker. Just get it done. Boil it until its like falling off the bone. Then - let it cool down.

Now you need to pull the chicken out of the pot and you need to strain all that broth. DO NOT LOSE ANY! Strain it back into the pot. You just want to verify no bone fragments found their way in.

Season your broth to taste. This is where you use the salt and pepper. I like mine salty, maybe you are one to fancy the pepper? Just season, stir and taste until its just like you like.

Chop up those green onions! Only the green part. You can toss the rest. Add that to your broth pot. Now turn the heat back on and start bringing the broth to a boil.

Pick your chicken off the bone CAREFULLY.. Do NOT let bones in your pot! Shred the chicken up fairly small and toss it into the pot. Once ALL of your chicken is in the pot add rice. 1-2 lb depending on the size of your pot. I use 2lb but I use a HUGE pot.

Turn down the heat on low and cook uncovered stirring occasionally until the rice is done. 10-14 minutes. Should thicken up nicely!
